Quick Easy & Hearty Recipes!

So I have a full time 9-5 job and let’s face it, a 9-5 job almost never ends at 5. Working those extended hours at work and running around or even sitting at your desk all day long leaves you exhausted. More than often we end up eating outside or depend on take away’s.

Below I have listed few of quick and easy recipes that you can whip up without much hustle.

Not only are these recipes easy to make, they are also filling and far more healthy than what we eat outside.

My One Pot Wonder (Veg)

Ingredients 

  • Veggies : Carrots, capsicum, cabbage, cauliflower (Or any 3-4 vegetable of your choice)
  • Regular refined oil or sunflower oil (Try olive oil for a healthier option)
  • Red Chilly Powder – 1 tsp
  • Coriander Powder – 2 tsp
  • Turmeric Powder – 1/4 tsp
  • Garam Masala Powder – 1/2 tsp

Curry leaves and dried chili’s can be used for tempering. *Optional*

Directions

  • Heat oil in a non stick wok, add garlic and stir-fry for one minute. Add onions, French beans, carrot, green capsicum, cabbage and half the spring onion greens. Stir-fry for two minutes.
  • Add salt, red chilly powder, coriander powder, turmeric powder along with garam masala and mix thoroughly.
  • Add boiled rice and adjust the seasonings.
  • Serve hot.

Ingredients 

  • Chicken (Diced into cubes)
  • Regular refined oil or sunflower oil (Try olive oil for a healthier option)
  • Red Chilly Powder – 1 tsp
  • Coriander Powder – 2 tsp
  • Turmeric Powder – 1/4 tsp
  • Garam Masala Powder – 1/2 tsp

Egg Curry With White Rice

Ingredients 

  • Eggs – 6 (Hard Boiled)
  • Red Chilly Powder – 1 tsp
  • Coriander Powder – 2 tsp
  • Turmeric Powder – 1/4 tsp
  • Garam Masala Powder – 1/2 tsp
  • Coriander – for garnish
  • Salt – to taste
  • Oil – 2 tbsp
  • Onion, garlic & ginger paste

Directions

  • To begin making the egg curry recipe, heat 2 tablespoons of oil in a wok; add in the onion,garlic and ginger paste. Sauté for a few minutes until the raw smell goes away and the onion changes color.
  • Once the onion is well roasted, add in the turmeric powder, garam masala powder, coriander power and red chili powder. Stir those powders into the onion masala until well combined.
  • Now add in the tomato puree, salt and the eggs. Simmer the Egg Curry covered for 10 to 15 minutes until you see the eggs are coated well with the curry.
  • Check the salt and spice levels and the consistency of the curry. Adjust them to taste and add water if you want the consistency of the curry to be thinner. Once done, stir in the chopped coriander leaves and serve.
  • Serve the Egg Curry along with hot steamed rice.

Pasta In White Sauce

Ingredients 

  • Pasta – 2 cups
  • Butter – 2 tbsp
  • All Purpose Flour – 2 tbsp
  • Milk – 1 cup
  • Salt – 1/2 tsp (or as needed)
  • Black Pepper Powder – 1/4 tsps

Directions

  • Boil any variety of pasta. The pasta should be cooked al dente i.e. it should have a cooked but with a firm bite to it and not get mushy.
  • Drain the pasta.
  • In a saucepan, melt the butter over medium low heat.
  • Add the flour and keep mixing till the raw smell of the flour is gone and a nice nutty aroma comes.
  • Add warm milk little by little and keep mixing the mixture.
  • Add salt, pepper and other optional ingredients (if you are adding) and bring it to a boil.
  • Simmer for 2-3 minutes. This basic white sauce is also called bechamel sauce. You can use this sauce immediately or store it in the refrigerator for up to a week for later use.
  • When the sauce is heated through, mix in the cooked pasta. Yummy pasta is ready to serve.
